In the first decade of the 21st century, engineered yeasts have been described efficiently fermenting xylose,[3][4] and arabinose,[5] and even both together.[6] Yeast cells are especially attractive for cellulosic ethanol processes because they have been used in biotechnology for hundreds of years, are tolerant to high ethanol and inhibitor concentrations and can grow at low pH values to reduce bacterial contamination.[citation needed]
