Turşu are pickles made with brine, usually with garlic added. It is often enjoyed as an appetizer. A variety of vegetables are used, from cucumber to courgette. In towns on the Aegean coast, the water of turşu is consumed as a drink.[citation needed] The name comes from the Persian "torshi", which refers to pickled "torsh" (sour) vegetables.
